Bake it quickly and not in the oven!

Are you using your oven less and less these days? When it comes to smaller dishes or anything that doesn't absolutely need the full sized oven, I'm much happier to use my electric pressure cooker.

You might already have tried my Baked Caramel Brie Appetizer but that DOES use the oven, and I certainly don't always want to use my oven.

Truthfully, my small appliances, like the electric pressure cooker for this recipe, get used far more often. Why heat up an entire oven for a little round of Brie? Save that for the turkey.

This works much better if you have a ramekin or other heat-proof bowl that JUST fits the Brie – so about 4 1/2 or 5″ in diameter and at least 1″ deep.

If you don’t have a container this size, you can wrap the round of Brie tightly with aluminum foil.

What pressure cooker should I use?

Until I tell you otherwise, assume I know nothing about stovetop pressure cookers. But the electric pressure cooker? I LOVE mine.

This recipe was tested with the Instant Pot, but it will work in any of them. Here are my reasons why you really need an electric pressure cooker, and three good options.

Pressure Cooker Brie & Apple Appetizer

Super easy and delicious Brie and Apple Appetizer cooks in the pressure cooker for holiday and other gatherings when you don't want to use the oven or it's in use for other items.

  • 8 ounce Brie
  • 2 baking apple (cored and chopped)
  • 1/2 orange (peeled and chopped, with juice)
  • 2 Tablespoons. red onion (chopped)
  • 2 teaspoons fresh ginger (finely minced)
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon dried rosemary
  • 3 Tablespoons honey (preferably local)
  • 1/4 teaspoon salt
  • 1/4 cup apple cider
  • 1/4 cup pecans (roughly chopped)
  • Fresh thyme or rosemary sprigs (for garnish)

Instructions

  1. Carefully cut the top off the round of Brie and place inside a round heat-proof bowl just large enough to hold it.
  2. You need a ramekin or other heat-proof bowl just large enough to fit the Brie round (approximately 4 1/2 – 5-inch diameter and at least 1-inch deep). If you don’t have a container this size, you can wrap the round of Brie tightly with aluminum foil, as well.
  3. Place the rind back on top of the Brie and cover tightly with aluminum foil. Set aside.
  4. Add the chopped apples, orange, onion, ginger, cinnamon, cloves, rosemary, honey, salt, and apple cider to the pressure cooker and stir to combine.
  5. Place the prepared round of Brie on to the cooker trivet and carefully lower into the unit with the trivet arms up for easy removal.
  6. Lock the lid into place and flip the pressure valve to Sealing. Set the Manual setting to High for 5 minutes.
  7. When the cook time is complete, allow pressure to release naturally for 10 minutes, then do a quick release for any remaining pressure.
  8. Once the pin drops and no additional steam comes out, carefully remove the lid before lifting out the trivet and Brie with potholders. Set aside.
  9. Select the Sauté function on the highest setting. Bring the fruit mixture to a low boil while stirring frequently.
  10. Heat until the mixture thickens, approximately 2-3 minutes. Turn the unit off.
  11. Remove the foil and the top piece of rind from the warm Brie. To serve, transfer to a platter and spoon some of the fruit mixture on top.
  12. Sprinkle with the chopped pecans and garnish with small sprigs of fresh rosemary and/or thyme, if desired. Serve immediately with gluten-free crackers or crostini, and/or fresh apple slices.
