I like baking from scratch, but sometimes it’s nice to whip up muffins or cupcakes on the fly and in a hurry too. Boxed cake mixes can be your friend when you have the time crunch happening or when you’re low on certain ingredients.

But when you're cooking gluten-free, boxed mixes can be a lifesaver. Balancing the different flour types, figuring out how much xanthan gum or other additives – the mix takes care of all of that.

The only thing you have to do is mix it up, add the extras you want, and enjoy.

This recipe works best if you get the 100% pureed pumpkin and not pie filling. The cans are very similar and often next to each other on the shelves. Or you can use your own homemade pumpkin puree – just be sure to let it drain in a wire mesh strainer to remove the extra liquid.

This recipe works with a regular cake mix as well, it doesn't have to be gluten-free!

Chocolate cake mix also works well if you prefer.

Spice cake mix gives a nice Autumn flavor profile with the pumpkin too.

You can also add some chopped walnuts if you like a muffin with some crunch in it.

Almost Scratch Gluten Free Pumpkin Muffins

Start with a gluten free cake mix and quickly make delicious pumpkin muffins that are safe for the whole family.

Ingredients

  • 1 box gluten free cake mix
  • 1 can pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 2/3 cup water
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350F
  2. Spray muffin tin with no-stick spray or line with papers and then spray those, whichever you prefer
  3. In a large bowl mix together all ingredients
  4. Divide mixture evenly into the 12 muffin cups
  5. Bake for 30 minutes
