Definitely More Than Wet Bread
Start with this basic recipe and add your own custom ingredients – diced potatoes, fruit, bacon, or even sausage.
A few years ago, we hosted two young Mennonite couples at our home for Christmas dinner. One young man looked at my dish of stuffing in confusion and asked what it was. I explained, but that didn’t help.
“Wet … bread? I’ve had my sandwich get wet sometimes and it doesn’t … really taste good.”
Even though it was new to them, they enjoyed my variation on this basic bread stuffing.
Now whenever I make stuffing I think about “wet bread” and smile.
You can dry the bread in the oven – 200F for about 30-40 minutes, flipping it half way through. OR you can do what I do, and what my mother always did, and leave the bread out on the counter overnight.
Chop the celery and onion into small pieces.
Melt the butter in a large pot over medium heat.
Add the onion and celery and saute until soft, about 10 minutes.
Add the turkey broth and poultry seasoning.
Turn the heat off.
Preheat your oven to 350F
Break the bread up into smaller pieces by hand. How small is really your own personal preference. If you like a chunky stuffing, make the pieces a bit bigger.
I always add raisins, chopped apples, and sometimes craisins to my stuffing. I’ve also been known to stir in cooked diced potato, making it almost a meal in itself.
Add the bread to your pot of vegetables. Make sure the stove is turned off as you don’t want to cook the bread. You simply want to soak it with the broth.
Stir it carefully and completely, so that all the bread is coated.
Add one or two eggs. The egg can help your stuffing stick together a bit better.
Scoop the stuffing into greased muffin tins or a baking dish.
Place in 350F oven for about 45 minutes and serve hot with mashed potatoes, turkey gravy, roasted turkey, and all the fixings.
